The Chronicles of My Keto and Intermittent Fasting Journey

Today is the 1st day of my Keto/IF journey. Ever since I was young, I've loved carbs ... all kinds of carbs really ... bread, pasta and noodles are my favorite things on earth. My palette for sweet things are much greater than savoury things. So when I decided to embark on the Keto/IF journey, the first thing that popped up in my mind is if it was going to be hard for my body and mind to adapt after all these years of being a sugar and carb lover.

So let's start with the Intermittent Fasting and the one method I'm adapting is the 16/8 which means starting your first meal at 12pm and finishing your last meal at 8pm. To my pleasant surprise, I eased to it naturally and instantly. I was amazed by how I didn't feel an ounce of hunger despite being one who eats two breakfasts a day starting as early as 7am. I wondered if it's because my body was burning all the sugars stored in my body all this time and I'm sure there are lots and lots of it. Instead of feeling sluggish like I do sometimes after a meal, I actually felt alert and energetic throughout the day. What really helped me I guess was drinking water with freshly squeezed lemon juice. I just felt satiated all day long. When it came time to eat at 12pm, I realized that I wasn't starving. I was doing really well. And it felt good to feel so light in the stomach. I am totally loving this.

To be honest, going on the Keto diet somehow worries me more than doing the Intermittent Fasting the moment I think about foregoing all these foods that I love. For somehow who loves cooking, no sugar and no carbs is a nightmare. On top of that, it is completely reversing our whole palette. I just can't quite figure out how to eat 70% fats, 20% protein and 10% carbs. But then I figured that the easiest thing to do would just be to eliminate all the sugar and carbs first and don't worry so much about the ratio for now. So here's my first Keto meal ...

Cucumber Kale Avocado Egg Salad in Caesar Salad Dressing and Butter Pan-Fried Salmon

It was yummy and delicious and so filling that I miss my carbs at all. Hey, now I feel that Keto is as bad as I thought it would be. I am actually enjoying it tremendously. I wasn't exactly sure what 70% fat means but I made sure I had enough avocados and some pecan nuts and also cheese. 

After lunch, all I had was lemon water and that keep me going till dinner. For dinner, I had what everyone else had at the dinner, only no rice and no sugar. Not bad at all. Having only on two meals a day instead of eating 5-6 meals a day actually made it super easy and stress-free.

Drinking Apple Cider Vinegar in the morning and at night with probiotics was not the most pleasant thing in the world but it wasn't bad. All it takes is a few gulps. I am so happy that I made it through 1st day with Keto/IF. Like my friend Derek said, I was born to do this. Looking forward to my results in 2 weeks. I can't wait to see what will happen.

Day 3

Today, I have a lunch appointment so I am eager to see how easy it would be to follow the guidelines without feeling dissatisfaction or hunger. We went to a dim sum restaurant and while I was searching for keto-friendly foods, this one immediately jumped out at me ... steamed pork ribs which I haven't had for the longest time. And my gosh .. did it taste yummy! It isn't something I normally would order but it was refreshing for a change. And I had Siu Mai (not pictured here) and also beancurd pork in chicken broth. Wow ... not bad for a start. I avoided all the heavy carb foods like spring rolls, steamed BBQ pork buns and steamed Cheong Fun. It was a very satisfying 1st outside Keto meal indeed!

Day 4

For the past 4 days, I have been eating just twice a day without any food in between except for a few pieces of macadamia nut and I felt alright. But today by 4pm, I was feeling a little hungry so I decided to go for a cheese omelette. Mine did it fill me up. I was so full I could barely finish it. It was only 1 egg and a sprinkling of cheddar cheese. I think the olive oil also made a difference. Gosh ... I l'm loving how I am easily satiated.

Day 5

Yay! Can't believe that I made it to Day 5 so easily and happily. Already I can feel the difference but I am holding the weigh in until Sunday cuz I didn't want to get obsessed about the weight because it's really good health I'm after.

For the first time since I started Keto that I heard my stomach growling before noon. I didn't feel hungry but my stomach was just growling. And I'm guessing that it might just be that my body sugar is depleting ... haha! The other I discovered is that my poop was floating (usually it sinks) so I think that is a really good sign.

I had a big salad for lunch - 1 whole avocado, 1 egg, 1 pc panfried chicken breast and a sprinkling of pecans and caesar dressing. I tried really hard but I was full half way and I had to save it for dinner. Somehow they really fill you up. 

For dinner, I decided to try a recipe from dietdoctor.com ... this Keto Casserole Chicken. I had to use 1 whole cup of sour cream in it and 7 oz of cheese. Now this high fat diet isn't something that I'm completely used to so I find myself not liking it as much. Perhaps it will taste better with Mayo? Definitely worth trying again. Anyways, it's a good and simple Friday night meal.

Day 8

It's been exactly a week since I started on this Keto/IF journey and I'm loving it a lot. I get to eat lots of food that were previously deemed bad for our health. So for the past 30 years, I've been on a low fat, high carb diet. And now I understand why it is so hard for most people to lose fat despite exercising so hard. It's because you are always burning sugar instead of burning fat. I now understand why all these years, I have been gaining more and more water weight despite staying on a very low fat diet and not eating more than I was before. The more I researched, the more I realized why I look the way I am now.

I had lost 1kg in weight. I am pretty happy about it because if I can keep this up for 12 weeks, that'd be 12kg already! And the most important thing is, I do feel very good because my stomach feels light most of the time and even after a meal.
